You’re wondering why I have been posting some seriously delicious Chinese cuisines these days? Well, I’m strictly on a no-Chinese food diet (I tend to eat a lot when it comes to Chinese dishes), so the only way I can stick with it is just to content myself looking at them.

This dish is made of pork belly spiked with dried red chiles and star anise. It’s a simple dish with not much ingredients; but, it thus pack a strong and unique flavor.

Aside from shrimps, another one of my most favorite sea creature (yes, I made it actually sound like Ursula in “The Little Mermaid”) are crabs. Little red Sebastians. But since you can only do so much with crabs (unless you want to tire yourself with cracking them open), I decided to post here one of the most delicious Chinese dishes you will ever, ever taste–the Crab Foo Yong.

This dish is made by sauteeing crabs, eggs and vegetables together, then topping them off with an oyster-based sauce that is so heavenly you can actually forget your name on the first bite.

I am not a big vegetable-eater but I go gaga over grilled vegetables like eggplant, etc. So in particular, I love this recipe because it combines the basic elements (atleast for me) to make a dish taste delicious.

Ingredients:

1 1/2 pounds Chinese or Japanese eggplant, cut diagonally in 1/2-inch slices

1 teaspoon sesame oil

1 tablespoon canola or peanut oil

3 cloves garlic, minced

2 teaspoons minced fresh ginger

3 scallions, thinly sliced

1 to 3 jalapeno or serrano chilies, minced

For the sauce:

3 tablespoons soy sauce

2 tablespoons rice wine

2 tablespoons rice vinegar

1 tablespoon honey or sugar

1 tablespoon cornstarch
