Well the, this summer time, prepare to enjoy this delectable recipe that will surely bring the summer heat down a notch. These delicious rolls, coupled with the dipping sauce, are great for snacks and even for main meals.
This recipe is adapted from The Gloriously Gluten-Free Cookbook by Vanessa Maltin.
Ingredients: (makes 12 rolls, serves 6)
For the dipping sauce
1/4 cup fresh lime juice
1/4 cup sugar
1/4 cup Thai fish sauce
1 teaspoon minced Thai chiles (or to taste, optional)
1 garlic clove, minced
3 tablespoons finely shredded carrots
1/4 cup warm water
